Kale Caesar Salad


Look past the bacon, there is a yummy salad underneath. Kale is an amazing source of nutrition and if you have been stuck on adapting your taste buds to kale, I encourage you to try lacinato kale or sometimes called dinosaur kale. I think the flavour and texture is better for some. Kale belongs to the brassica family, which is extremely nutritious, rich in vitamins and minerals and great for your body.

Kale contains vitamin A, K and vitamin C making it great for skin health, immunity and contains compounds that have been linked to the prevention of certain cancers. Eat up!

I used anchovies in the dressing and before you stop reading, let me tell you why anchovies are so good for you. Anchovies are high in vitamin B12 as well as Omega 3 fatty acids that help protect the body from heart disease, reduce inflammation and reduce high blood pressure.

Nutritional yeast is a dairy substitue for those who cannot have dairy. It gives the dressing a cheesy flavour without using dairy.

Kale Caesar Salad
2 garlic cloves
3 anchovies, packed in oil
2 tsp dijon mustard
2 tbsp nutritional yeast or 2 tbsp parmesan cheese
juice and zest of 1 lemon, preferably organic
1/4 tsp sea salt
1/8 tsp pepper
1/4 cup extra virgin olive oil
3 tbsp water
1 bunch lacinato kale, washed, dried and stems removed
crispy bacon for serving

Place all the ingredients in a blender or food processor and blend until smooth. Add the kale to a large bowl and toss with the dressing. Add in cooked bacon, toss to combine and serve.

  1. Do you use the sardines with bones/skin on or do you use the boneless, skinless variety?
