Dairy Free Alternatives


Ava loves fresh almond milk and if you are used to buying almond milk, making it fresh is SO much better. I use brazil nuts, cashews, almonds, pumpkin seeds, sunflower seeds, pistachios and oats to make all different varieties of milk. You can mix them up, there are no rules. Some nuts require a longer soak time than others.

You can add any spice you like, including lavender, vanilla, cinnamon, ginger, and nutmeg to name a few. I use a liquid stevia in my milks because it has zero effect on blood sugar, which is a good thing for me, but dates, raw honey or pure maple syrup are great additions.


Pistachio milk and Rooibos Chai

I love pistachio milk with cinnamon and stevia and it really goes well with chai. Pistachios do not have to be soaked like almonds and when the milk is done it has this beautiful pale green color. 

Pistachio Milk
1 cup pistachios
4 cups water
1/2 tsp cinnamon
1/2 tsp vanilla powder
a few drops of stevia (optional)

I let the nuts soak on the conter in water for an hour with a few pinches of sea salt. Drain and rinse. Add the pistachios to a Vita-mix with 4 cups filtered water and blend for 90 seconds on high speed. Strain through a nut milk bag and blend with cinnamon and vanilla powder. Cardamom makes a nice addition as well. Place in a glass jar and refrigerate. Keeps for 3 days.

    1. Pistachios can be found raw, at Planet Organic, The Light Cellar and Amaranth. The nut milk bag is found at The Light Cellar. You cannot buy Pistachio milk however.
