Raw Chocolate Pudding


Although this is a healthy version of chocolate pudding it is still rich with mono saturated fats. A little goes a long way and your body can only handle so much in one sitting. The kids and I like to dip our fresh cut up apples and bananas in this, making this a great snack or dessert.

I think its best left for a few hours in the fridge for the flavors to combine. I have cut caffeine out of my diet so I used a dandelion root coffee substitute however coffee or decaffeinated coffee would be great. I also used mesquite powder because I love its unique flavor. If you are unable to find it, you can use arrowroot powder instead. The powder gives it a mouse like texture.

Avocados are rich in B5, the vitamin that helps support your adrenal glands. Avocado is a great source of vitamins for skin, hair and nails.

Raw Chocolate Pudding
3 ripe avocados, pitted and scooped (mine were really small)
heaping 1/4 cup raw cacao powder
1 tbsp almond butter
1 tbsp mesquite flour
1/3 cup pure maple syrup (you may need a little more depending on size of avocados)
pinch of sea salt
1 tsp vanilla powder or vanilla extract
3 tbsp coffee or decaf coffee

Blend all the ingredients together in a food processor. Place in a bowl, cover with plastic wrap and refrigerate for a few hours to allow flavors to blend.

  3. Mesquite Powder is actually a tree pod ground into a powder and it has a chocolaty flavour. It has a great nutrition profile, with magnesium, fiber, calcium, potassium, iron and zinc.
