I finished school at the end of July so I took August to recoup and spend some time with family and friends. I have been greatly neglecting my blog duties, however, I am in the process of designing a new blog with a new name and it is taking some time. I thought I would post a few recipes that I have been working on lately.
These green beans are so simple and great paired with anything, but my absolute favorite is with seared scallops. I love recipes just like this one because it takes virtually minutes to prepare and it tastes so delicious. Both A's really like this dish and I don't have to struggle to make them eat these beans.
The Best Green Beans
1 pkg, fresh green beans (go for the best quality you can find)
1 tbsp butter
1/4 cup finely chopped red onion
1/4 cup pecans, roughly chopped
2 tbsp maple syrup
sea salt and pepper
Cut the ends from the green beans, wash and set aside to dry. In a large non stick skillet add the butter and the onion and cook over medium heat for a few minutes. Add the green beans to the pan, tossing every few minutes until they start to cook and turn bright green. This should take 5 - 7 minutes. Add in the pecans, cook for another minute, then drizzle with maple syrup and toss to combine. Do not overcook the green beans or they will lose most of their flavor. Serve immediately.
