Gluten Free Banana Oat Pancakes


Stampede is among us and you know what that means, pancake breakfast time. I have to admit I really dislike pancakes. I think they are tasteless and I just don't enjoy them. I came up with this gluten free version that tastes like a cross between oatmeal cookie and banana bread. It's delicious and satisfies the stampede crowd waiting for breakfast.

Just a few more weeks of studying and I will write my final! This summer weather is making it really hard to study but I'm almost there. I hope everyone is getting in some stampede fun.

Gluten Free Banana Oat Pancakes

3 small ripe banana's, mashed
2 eggs
2 tbsp coconut oil (I used full flavor), warmed
1 tsp vanilla
1 tbsp maple syrup
3/4 cup whole oats
1/2 cup oat flour 
2 tbsp ground flax
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Mash the banana's and add the egg, coconut oil, cinnamon, maple syrup and vanilla. Stir to combine. Mix in whole oats, ground flax, cinnamon, salt, baking powder and baking soda, Mix thoroughly then fold in the oat flour. Do not mix it too much ounce the flour has been added. Let sit a few minutes before dropping batter on a frying pan.

This made 9 pancakes for me. They are really filling, healthy, tasty pancakes.

    I just found your blog today when I was searching for Paleo restaurants in Calgary and read your review on Charcut, which I have heard about before but now I'm super excited to go there!! I also have a couple of friends who do Crossfit, which scares the heck out of me because I am very soft and out of shape, but it's always in the back of my mind.....which location do you attend?

    You may see me at CrossFit Calgary form time to time but my workouts there are far less than what they used to be. I do most of my workouts from home. All the CrossFit locations in Calgary I have heard good things about.
