Homemade Baileys


Happy St. Patricks Day everyone!! I came across this recipe and wanted to make it, but when my sister asked me to bring Baileys over for her birthday celebration I jumped at the opportunity to give this recipe a try.

I used a mixture of coconut milk, almond milk, strong organic coffee and palm sugar with Irish Whiskey. It is really amazing and tastes exactly like Baileys. I adapted the recipe slightly by using coconut sugar, some almond milk, and a little vanilla powder for some depth. Seriously, give this recipe a try, you won't be disappointed.

Homemade Baileys Irish Cream
adapted from Oh She Glows
1 can full fat coconut milk
1 can almond milk
1/2 cup palm sugar or sucanat
1 cup strong coffee
1 cup Irish Whiskey
pinch of salt
1 tsp vanilla extract or vanilla powder

In a medium saucepan add the coconut milk, fill the empty can with almond milk and pour into the pan. Add to the milk the palm sugar and bring to a boil. Reduce the heat and let simmer for 10 - 15 minutes. Remove from the heat and add the coffee, whiskey salt and vanilla. Pour into a mason jar with a lid and put it in the refrigerator to chill. Serve over ice.

  1. Can you use almond milk from the carton? If so, how much? I have never seen almond milk in a can.

  2. Yes, carton. I just filled the empty coconut milk can to measure. I use the SILK variety as it does not contain MSG.
